The important content of tea, which consists of bacteria and yeast, is Kombucha mushroom. The mushroom consists of a gelatine-like membrane, similar to a flat disk. Kombucha mushroom lives in a nutritious solution with tea and sugar, and it constantly reproduces in this liquid. The mushroom layer spreads over the entire surface of the tea and then thickens.

Kombucha tea is extremely beneficial to health thanks to the effect created by the bacterial-yeast combination with the polyphenols of tea and green tea leaves.

Its important antioxidant active compounds are involved in cleansing the body from toxins and supporting immunity. It also plays a role in preventing chronic diseases and cancer.

The acid types contained in Kombucha tea provide pH control, preventing the growth of unwanted bacteria in the body and eliminating all foreign substances entering to the body from outside.

One of the most important features of Kombucha tea is that it contains an antioxidant called D-saccharic acid, one of the most recent discoveries. Thanks to this antioxidant, individuals with stressful body calm down more easily.

Tea contains vitamin C, B1, B2, B6 and B12, iron, copper, zinc, fluorine, chlorine, iodine, phosphorus minerals and amino acids, which are the building blocks of proteins. However, this varies depending on the quality of yeast, the type of tea used, fermentation time, temperature and sugar content.

Ingredients:

Kombucha mushroom

Half a glass of ready-made kombucha tea (the liquid your mushroom remaining for a while)

5 tbs sugar

6 grams of tea

4 cups of water

1 liter glass jar

Wooden spoon

Plastic strainer

Preparation:

First, boil the water for 5 minutes on the stove. Add sugar and mix with the wooden spoon until completely dissolved in water.

Add the tea to water and let it brew without boiling.

Strain after the tea is brewed and wait until it reaches room temperature.

Transfer the tea to the glass jar, but do not fill it all.

Add the Kombucha mushroom to the tea in the jar and pour the liquid that the mushroom remained in for a while.

Leave up to two fingers space in the glass jar. Otherwise, it will overflow during fermentation.

Since the Kombucha tea will ferment, make sure that the tools you use are wood or plastic. Do not use metal tools.

Cover the jar with air. To achieve this, wrap the mouth of the jar with a clean cotton cloth and fix it with a rubber.

Leave to ferment for 1-2 weeks at room temperature in a sunless place.

After the fifth day, you can taste it with a wooden spoon. After 1-2 weeks, Kombucha tea will be ready. Then remove the mushroom from the tea and strain it.

Please remember, as the acidity of Kombucha tea increases, its taste becomes sharper. You will decide when to consume according to your taste. If you wish, you can add honey to your tea. Also, don’t forget to separate half a glass of the remaining tea for use in the next tea preparations.

You can store the tea you prepared in the refrigerator in glass, stainless steel or plastic boxes that are safe for food.

Side Effects of Kombucha Tea

It will not a problem for individuals who do not have any health problems to consume 100-300 milliliters, ½ -1.5 cups, of this fermented drink. Only pay attention to the hygiene issue and rules while preparing the tea.

Increase the amount of consumption over time. Make sure that the amount is limited during the first use.

Do not drink if you have gastritis, stomach ulcers or are sensitive to acidic foods.

Breastfeeding and pregnant women should avoid consuming tea as even it contains low amounts of alcohol and caffeine. Individuals who are unable to resist low levels of sugar, caffeine or alcohol, or have a weakened immune system, should also not consume Kombucha tea.

Finally, while preparing Kombucha tea, since sugar is added to the mixture, the amount of sugar you take will increase if you drink too much tea. This may trigger obesity and increase the risk of chronic diseases such as diabetes, gout and joint diseases.
